Pineau d'Aunis is a rare red grape of the Loire, and Mathieu Vallée grows it on Bay Rouge, a southwest-facing plot of clay-limestone in the village of Parnay. Half the grapes stay as whole bunches and spend ten days in concrete tanks under carbonic maceration. The wine then rests twelve months in large foudres without racking. It pours light and bright, with sour cherry and wild strawberry first and then the white pepper this grape is known for. We like it slightly chilled, next to anything off the grill.
