L'Ivresse de Noé, Noah's drunkenness, is Tony Bornard's sweet Savagnin. The grapes stay on the vine in Pupillin until November and shrivel slowly, so the sugar concentrates while the Jura acidity holds on. The wine isn't fortified; it spends four years in topped-up 400-litre barrels before bottling. Honey, dried apricot and candied orange peel, with enough freshness that a small glass never feels heavy.
