ISH started in Copenhagen in 2018 and makes this Merlot from 100% French grapes. The wine is fermented in steel like any other red, then dealcoholized at low temperature by vacuum distillation so the fruit stays intact. In the glass it gives cherry, a little vanilla and chocolate, balanced acidity and a tannic finish. We list it for the table where a red is wanted and alcohol isn’t.
