This wine is sourced from high-altitude sites on Jurassic limestone and clay-marl soils in the Ardèche foothills. The terroir offers excellent drainage and retains just enough water to balance vine stress. Cool nights and stony soils help maintain freshness and aromatic precision in the Pinot Noir, lending a Burgundian finesse to this southern expression.

 

Viticulture:
Grapes are grown with respect for nature using sustainable practices and low yields. Careful canopy management allows for slow, even ripening, while manual harvesting ensures that only healthy, ripe bunches make it into the cellar. Vignobles Dubard emphasizes low-intervention growing to capture a true sense of place in every bottle.

 

Winemaking:
The fruit is fully destemmed and undergoes a gentle, infusion-style maceration over 12 to 14 days to retain delicacy and aromatic lift. Fermented with native yeasts, the wine is aged in a mix of neutral barrels and concrete to preserve freshness and purity. It is bottled without fining, unfiltered, and with minimal sulfur to maintain its natural charm.

 

Tasting Notes:
Pinot Noir Fever is light-bodied, bright, and expressive. It bursts with red berry notes—raspberries, wild strawberries—layered with herbal hints and a whisper of rose petal. The texture is silky, with soft tannins and a clean, lively finish.
