It comes off granite and old clay-limestone in Wettolsheim, thirty-five years of roots digging for what they need, put through stainless steel that does nothing but stay out of the way. Lime, green apple, a wet-stone streak, the kind of dry that makes you want the next sip before you've swallowed the first.
