ISH, a Copenhagen producer, makes this Chardonnay from 100% French grapes. The alcohol is taken out by vacuum distillation, where it evaporates at around 38°C instead of 78°C, so the fruit, freshness and structure stay in the glass. Expect pear, yellow apple and lemon, with clean acidity and a light mineral edge. It goes with chicken, white fish, fresh salads and spicy Asian dishes.
