In French, battre la chamade is what your heart does when it pounds. Tony Bornard gives the name to his Ploussard from Les Chambines, a west-facing slope at about 400 metres in Pupillin, where the vines are 45 to 80 years old. It is the deeper of his Ploussard cuvées: blueberry and cherry, violet and geranium, then an earthy, mineral palate that keeps going.
