Les Marnes shows the other side of Savagnin. The barrels are left untopped, a thin veil of yeast forms on the wine, and the slow contact with air gives it the nutty, savoury character the Jura is famous for. Grown on the marl soils the cuvée is named after, it comes close to a Vin Jaune in power: walnut, sultana, dried yellow fruit, white pepper and a salty, umami finish. Try it with aged Comté.
