Vin Jaune is the Jura's most patient wine. Savagnin goes into old barrels that are never topped up, a veil of yeast grows across the surface, and the wine waits there for more than six years before it goes into the squat 62 cl clavelin bottle the appellation requires. Bornard's 2013 has the classic walnut and hazelnut, dried fruit, a curry-like spice and a long, salty finish. It will keep for decades, and aged Comté is its natural partner.
