Savagnin is the Jura's great white grape, and here Tony Bornard keeps it fresh rather than oxidative. The barrels were topped up for six years while the wine fermented slowly at its own pace, and it was only bottled in August 2024. The vines, planted in 1990, face east on Keuper marl in Buvilly, just outside Pupillin. Lemon, ripe apple and hazelnut, a round, dense texture and a long salty finish.
