In Pupillin, people call Ploussard "Plouplou", and the village is known for this thin-skinned red grape more than anywhere in the Jura. Tony Bornard ferments it with its own wild yeasts and leaves it on the skins for about a month in steel, so the fruit stays bright. At 14.4%, the 2022 has more depth than the pale Ploussard many people expect: strawberry, raspberry and a little earth. If you're new to Jura reds, this is where we'd start.
