Terroir:
Domaine Tollot-Beaut is situated in Chorey-les-Beaune, within the Côte de Beaune region of Burgundy. The vineyards lie on the plains below the Côte d'Or escarpment, featuring clay and limestone soils which are ideal for cultivating Pinot Noir.
Viticulture:
The estate, managed by the Tollot family since the late 1880s, practices sustainable viticulture. The current generation, Nathalie, Jean-Paul, and Olivier Tollot, continues to uphold these traditions. The vineyards are planted exclusively with Pinot Noir, with vines aged between 1992 and 1998.
Winemaking:
This wine is made from 100% Pinot Noir. The winemaking process includes fermentation in stainless steel tanks, followed by aging for 18 months in Burgundian pièce (228-liter barrels), with 25% being new oak. This method adds depth and complexity to the wine while maintaining the purity of the fruit.
Tasting Notes:
The Chorey-les-Beaune by Domaine Tollot-Beaut is characterized by its vibrant ruby color. It offers aromatic notes of red fruits like strawberries and red currants, accompanied by hints of mint and baking spice. On the palate, it is medium-bodied with agile acidity and delicate tannins, showcasing a streamlined texture and a fresh finish.
