Terroir
South / southeast facing slopes, on deep chalky soils with clay top soil. Selection of the oldest vines of our parcel, aged from 40 to 60
years.

 

Surprisingly opulent, voluminous and silky, Boa le Rouge surprises the critics of this variety and amazes its admirers.

 

Winemaking
Harvested by hand, destalked and put into tank without treading. The alcoholic fermentation will so be made in tank, with very few stirring and with natural yeasts. After one and a half month, the wine is put in barrels where will occur the malolactic fermentation. It will stay there 18 months, in 400, 500 or 600 liter containers. We use only 15 % of new oak barrel, the rest being barrels aged of 2, 3 or 4 years.
The wine returns then to tank to be blended and stays there 3 months to well homogenize. Then, it is bottled without filtration, simply by natural clarification.
