Terroir:
Champagne Pertois-Moriset is located in the Côteaux Sézannais region, within the larger Champagne area of northern France. The vineyards span around 7.3 hectares, with a balanced composition of 60% Pinot Noir and 40% Chardonnay. The terroir benefits from a mix of clay and limestone soils, which contribute to the distinctive mineral character of the champagne.
Viticulture:
The estate practices sustainable viticulture, focusing on environmental stewardship and biodiversity. The vines are naturally grassed in winter, and the soil is ploughed in summer. Mechanical work is done using a 100% electric tractor, and no chemical inputs are applied when conditions allow. Sexual confusion is employed to control pests naturally.
Winemaking:
This champagne is crafted using a traditional method, with a blend of 50% Pinot Noir and 50% Chardonnay. The base wine includes 70-80% of the current vintage and 20-30% perpetual reserve wines. The wines undergo vinification in stainless steel tanks, and the reserve wines are aged in large oak barrels and stainless steel. The champagne completes malolactic fermentation and is aged for a minimum of 15 months in the cellar, with a dosage of 1 g/l of sugar, making it a brut style.
Tasting Notes:
L'Assemblage offers a bright golden yellow hue with fine bubbles. The nose reveals hints of fresh pastry, Williams pear, and yellow tropical fruits. On the palate, it is fresh and delicate with a balanced acidity, showcasing notes of red berries, ripe citrus, almond, nuts, and brioche. The finish is elegant with a lingering minerality.
